Caviar guides

What to drink with caviar: Champagne, vodka, wine and alcohol-free

The two classic drinks with caviar are dry Champagne (Brut, Extra Brut or Brut Nature) and ice-cold, unflavored vodka. Both work for the same reason: they're cold, clean and dry, so they cut the caviar's richness and refresh the palate without covering its delicate, buttery flavor. Avoid sweet wines and big, oaky or tannic reds.

Champagne and caviar

Champagne's bubbles and bright acidity lift the salt and cream of caviar, and each sip resets your palate for the next spoonful.

  • Go dry. Brut is the safe choice. Extra Brut and Brut Nature, with little or no added sugar, are even cleaner with caviar. Avoid Demi-Sec and Doux, which are sweet.
  • Blanc de Blancs is the classic match. Made from Chardonnay, it's crisp, citrusy and light, which suits a delicate, buttery caviar like ours.
  • Blanc de Noirs and rosé are fuller and work with brinier caviar, or when caviar sits on richer dishes such as potatoes, eggs or beef tartare.
  • Vintage or not matters less than dryness. A good non-vintage Brut is perfect.
  • Serve it cold, around 45–50°F, in a flute or a white-wine glass.

Not Champagne? Any dry traditional-method sparkling wine works: Crémant from France, Cava from Spain, or a dry California sparkling wine.

Vodka and caviar

The Russian tradition: a small glass of very cold, plain vodka with each bite.

  • Unflavored, clean vodka. Grain or potato, but no flavors; they fight the caviar.
  • Straight from the freezer. Ice-cold vodka turns slightly thick and its burn softens.
  • Small pours, sipped. A sip after each bite cleanses the palate. It's not a shot.
  • Serve it neat, in small chilled glasses, never with mixers or ice.

Wine, sake and other drinks

DrinkWorks?Why
Crisp, unoaked whites: Chablis, Muscadet, Sancerre, Albariño, dry RieslingYesHigh acidity, mineral, no oak to clash
Dry sake (junmai or ginjo), chilledYesClean, savory, gentle; good with the umami in caviar
Very dry martini or a gin with light botanicalsSometimesCold and dry, but strong botanicals can dominate
Oaky, buttery ChardonnayNot idealOak and butter pile onto the caviar's richness
Tannic red wineNoTannins can make caviar taste metallic and fishy
Sweet wines and cocktailsNoSugar flattens the delicate flavor

Alcohol-free pairings

The same rules apply: cold, dry and clean.

  • Very cold sparkling water, plain. The simplest palate cleanser.
  • Dry alcohol-free sparkling wine. Pick the driest you can find; many are sweet.
  • Chilled, unsweetened green or white tea. Light and clean.
  • Alcohol-free gin alternatives with tonic, if they're dry and not too bitter.

Skip sweet sodas and juices; they mask the caviar.

How to serve the drinks with caviar

  • Everything cold. The caviar on ice at 28–32°F, the drinks well chilled.
  • Taste the caviar first, on its own, then sip.
  • Keep the food simple. Plain blini, crème fraîche, maybe potato. See how to serve caviar and bread for caviar.
  • Plan the amounts together. About 15 to 30 grams of caviar per person for a tasting, and about one bottle of Champagne for every four to six guests for a toast and a glass. See how much caviar per person.

Common questions

Why do caviar and Champagne go together?

The bubbles and acidity cut through the caviar's richness and salt, and the cold, dry wine refreshes your palate so each bite tastes as good as the first. They also share a sense of occasion, which is why the pairing became a symbol of luxury.

Is vodka or Champagne better with caviar?

Neither is wrong. Vodka is cleaner and lets the caviar's flavor stand completely alone. Champagne adds a little fruit and bubbles and suits a longer evening. Many hosts serve both.

Can you drink red wine with caviar?

It's usually a poor match. Tannins in red wine can react with fish roe and leave a metallic aftertaste. If you prefer red, choose a light, low-tannin one, well chilled.

What should I avoid drinking with caviar?

Sweet wines, sugary cocktails, flavored vodka, beer with heavy hops and big tannic reds. All of them cover or clash with the caviar.
